before and after

BEFORE
Spinach, Brussel sprouts, tofu, potatoes, shallot, sun dried tomatoes and some marinated mushrooms and olives

AFTER 

Lunch.

And it was goooooooooood. All I added was a little kosher salt and fresh cracked pepper.

And you used olive oil to cook it all, right?

Sounds and looks like heaven. I was contemplating telling you about a pot of yum I cooked up a couple days ago, so here goes. There was corn, pinto beans, potatoes, onion, cut up baby peppers, chicken broth, and bc I didn't have fresh tomatoes :( I put a little plain tomato sauce in too. I served it with some finely shredded cheddar (Vermont, New York, & Wisconsin). mmmmmmmmmmmm The second day I added a cut-up avocado. MMMMMMMMMMMMMMM I've been eating Brussels sprouts and spinach a lot lately and was jonesing for corn, so I didn't add any green stuff. Deee-lish!
